Chayote Cream with Greek Yogurt and Psyllium (2 servings):
Ingredients:
- 1 courgette
- 1 chayote
- 1/2 leek
- 1/2 onoin
- 2 garlic cloves
- Extra virgin olive oil
- Water as needed
- Salt and pepper to taste
- 20 g of plain Greek yogurt
- 10 g of psyllium husk
Modo de preparação:
- Cut the courgette and chayote into small pieces and the leek into slices;
- Laminate the onion and garlic cloves and set aside;
- Add a drizzle of olive oil to a pan and then add the onion and garlic. Let braise for a few moments.
- Add the leek, courgette and chayote. Add water, season with salt and pepper, let it cook for 35-40 minutes. Then, pulse with a hand blender until smooth.
- Garnish with plain Greek yogurt, add 10 g of psyllium, and your chayote cream is ready to be served.
